Arabic Gum is a dried exudation obtained from the stems and branches of natural strains of Acacia senegal (L) Willdenow or closely related species of Acacia (family Leguminosae).

It replaces gelatine and starch and it is very similar to Agar. This type of Carrageenan is standarised to constant gel strength in water, in order to obtain a uniform performance.
