    Erythritol are White crystals, slightly sweet, with a relative sweetness of 0.65 with a cooling sensation. The calorific value is low, about one-tenth of that of sucrose. It is soluble in water (37%, 25°C) and has low solubility (compared with sucrose), easy to crystallize,having melting point 126°C and boiling point 329-331°C.
