    Conventional or organic available Eucalyptus olida, also known as the Strawberry Gum, is a medium-sized tree to 20 m, restricted tosclerophyll woodlands on the Northern Tablelands of New South Wales, in Eastern Australia. The bark is fibrous in mature trees. Flowers are cream colored and are followed by small woody capsules. The juvenile leaves are ovate (7 cm long) and dull green. Adult leaves are lanceolate and glossy green (to 17 cm). The leaves are intensely aromatic and are used as a bushfood spice. E.olida is classified as a threatened species in the wild, but is becoming more common in cultivation due to itsessential oil and spice qualities. E. olida leaf is also used as a dried spice product in bushfood cooking, especially with fruit and in herbal teas. It has high anti-oxidant activity.     A warming, stimulating oil, Pink Peppercorn is steam distilled from the fruit of the Schinus mole. This popular spice was considered sacred to the ancient Incas and has been used in traditional medicine for hundreds of years. Pink Peppercorn (Schinus molle), also known as the Peruvian peppertree, peppercorn tree and Californian pepper tree is a member of the Anacardiaceae family. It’s an evergreen tree that grows up to 9 meters in height by 7 meters in width. It is native to the Peruvian Andes. Chains of cream flowers appear at the end of the branches in summer followed by peppercorns, which turn pink in autumn and are referred to as ‘pink peppercorns’ although they are not true peppercorns. Pink peppercorns have a citrus flavor and are much more fragrant. Shinus molle grows wild throughout most of Australia in a range of habitats from grasslands to dry open forest and coastal areas. The branches tend to droop which gives the tree a weeping effect. It is found as a bush in dry lands but reaches tree size in dry river beds with accessible underground water. It is an evergreen that has a graceful fern like foliage. This tree grows well in the sun and is drought tolerant so can still flourish with only occasional watering. All parts of the tree have high oil and essential oil contents that produce a spicy, aromatic scent.

    There are two different varieties of chamomile you may come across; Roman chamomile (Chamaemelum nobile or Anthemis nobilis) and German chamomile (Matricaria recutita or Chamomilla recutita) The two plants are slightly different in appearance. In addition, the chemical composition of their active ingredients differs slightly. Research has been done on both strains and the active ingredient most researched is chamazulene which is higher in German chamomile. German Chamomile (Matricaria recutica) is native to central and northern Europe. The herb usually grows near populated areas; it is annual, strongly aromatic, and has tall, hairless, erect, branching stems, with delicate feathery leaves and simple daisy-like white flowers on single stems. The flowers are smaller than those of Roman Chamomile. Matricaria Recutita Flower Oil is the essential oil distilled from the flowers of the plant which are dried prior to distillation. Although commonly known as 'German Chamomile Oil' it is in fact not grown in Germany, but in years past, large volumes grown in Hungary were sent to Germany for distillation.

    Tasmannia lanceolata (syn. Drimys lanceolata), commonly known as the mountain pepper is a shrub native to woodlands and cool temperate rainforest of south-eastern Australia and the mountains of Tasmania. The shrub varies from 2 to 10 m high. This attractive tree has shiny dark green pointed leaves with scarlet stemletts. It has small, waxy, cream flowers which develop into dark charcoal brown pepper berries, only born by the female plants. The small cream or white flowers appear in summer and are followed by black, globose, two-lobed berries 5–8 mm wide, which appear in autumn. There are separate male and female plants.     Conventional or organic available Eucalyptus smithii, or gully gum, is a native tree of northern Victoria and southern New South Wales, Australia. It naturally occurs on the lower slopes, gullies, and swamps, where soil does not dry out. The species is widely grown in southern Africa, and its leaves are used for the production of distilled eucalyptus oil. The essential oil is steam-distilled from the twigs and leaves and has a woody, camphorous, yet fresh aroma. Eucalyptus Smithii is the mildest Eucalyptus oil and is the preferred choice for use with children or the elderly or when prolonged use is required. Australian aboriginals use oil-containing eucalyptus leaf infusions as a traditional medication for body pains, fever, sinus congestions, and colds. As early as the 1880s, surgeons were already using eucalyptus oil as an antiseptic during operations. Toward the end of the century, the oil was used in most hospitals in England to clean urinary catheters.
