Icing and topping of cakes, ice cream, and plated desserts.
- Basic recipe:
- Whipped Cream Topping............450g.(16 oz.)
- Water or Milk..........................550g.(20 oz.)
- Mix Whipped Cream Topping with liquid ingredients. Whip for 3 minutes on high speed or until soft peaks areachieved. Do not over mix. Store the finished cream under refrigeration.
- Alternate recipe:
- Whipped Cream Topping............ 350g.(12 oz.)
- Water.....................................400g.(14 oz.)
- Heavy Cream...........................250g.(8.8 oz.)
- Mix powder and water for 1 minute on high speed. Add the heavy cream while continuing to mix for 2 additional minutes. Store the finished cream under refrigeration.
