Naturally occurring gums such as gum Arabic are widely used in the food industry to provide emulsifying, stabilizing and encapsulating properties. Cargill has developed starch-based alternatives to overcome supply and quality problems related to climatic and political conditions. This product is an instantized, lipophilic starch recommended for stabilizing liquid emulsions such as beverage emulsions and concentrates. Modified starches are also more economical to use because they require lower usage levels (formulation dependent) without compromising performance, efficiency and throughput.
