Application

Naturally occuring gums such as gum arabic are widely used in the food industry to provide emulsifying, stabilizing and encapsulating properties. Cargill has developed starch based alternatives to overcome supply and quality problems related to climatic and political conditions. This product is a cold-water dispersible, emulsifying starch recommended for the encapsulation of delicate ingredients such as flavors, colors and vitamins.The low viscosity permits spray-drying at high dry solids. Typical applications include :

  • Spray-dried citrus oils and essences
  • Spray-dried and liquid clouds
  • Spray-dried cheese and dairy flavors
  • Spray-dried coffee-whiteners and soup creamers
