Hispanagar Gold Agar

Gold Agar is a premium food grade agar with a particularly low gelling temperature. This agar is suitable for use in a wide range of applications such as confectionery, bakery, glazing, dairy and meat products. The low gelling temperature makes Gold Agar particularly useful in applications where solutions must be kept in liquid form for longer periods of time. Gold Agar is stable when autoclaving and also performs well in adverse pH conditions.

Applications

Gold Agar is an ingredient used in food industry as gelling, stabilizing and thickening agent. Its main applications are fundamentally based on the enormous gelling power, high hysteresis and perfect gel reversibility. It is stable to heat treatment and autoclaving. Gold Agar is used in different food applications such as confectionery, bakery, glazing, dairy and meat products. Principal used of agar-agar: Bulking agent, Carrier, Emulsifier, Gelling agent, Glazing agent, Humectant, Stabilized, Thickener. Suggested use level: 0.5-1.0% in solution depending on the final product, texture and property to achieve.
