    The BelGioioso story began over a century ago when the great-grandfather of BelGioioso President, Errico Auricchio, founded a cheese company based on a philosophy of excellence. In 1979, Errico moved his family from Italy to America with the goal of continuing his great-grandfather’s legacy. He wanted to craft the best Italian cheeses in the United States.

    When Errico came to America, he scoured the United States in search of the highest quality milk to begin his goal of making exceptional specialty cheeses. It was in Wisconsin, “America’s Dairyland”, that he found the dedicated farmers and abundant green pastures and corn fields that produce superior milk. Wisconsin milk was and still is simply unbeatable.

    In addition to his immediate family, Errico also brought with him two master cheesemakers, Mauro and Gianni. To these gentlemen, making cheese isn’t a job, it’s a calling. They carry with them a strict focus on quality and an unending passion for crafting flavorful cheeses using artisan methods. Mauro & Gianni remain part of the BelGioioso family today and work tirelessly to share their wisdom with each new generation of cheesemakers.

    Together, Errico, Mauro & Gianni began by making cheeses familiar to American consumers such as Provolone, Parmesan and Romano. Soon, consumers wanted more; new cheeses, new flavors and new aromas. Over time, we introduced cheeses previously unknown in America. Mascarpone, CreamyGorg®, Italico® and American Grana® have now become favorites. Today, BelGioioso manufactures, ages, packages and ships over twenty five varieties of specialty cheese with new cheeses continuously in development.

    BelGioioso’s commitment to tradition and excellence carries with it the value of knowing how to make Italian cheeses just as they were long ago from recipes passed down by generations. As the company has grown, the passion for tradition and quality has never diminished.

    "Located on the shore of Seneca Lake in the heart of New York’s Finger Lakes region, US Salt has been in operation since 1893. The refinery sits atop a rich underground supply of salt. Water needed for the plant’s operations comes from Seneca Lake, a 40-mile long body of fresh water. Salt was first discovered in Watkins Glen in 1882. During that year the Watkins Oil Well Company was organized to drill for petroleum, gas, salt and other minerals. The company drilled a well on the hillside west of Watkins Glen, on the site of a spring which the Indians knew had medicinal properties. In September 1882 the Watkins Oil Well Company reported that, at 1,513 feet below the surface, it had reached a sufficient flow of brine to make salt. By 1890, the first brine-producing well was put into service. Impurities in the brine made it difficult to dry the salt. The first real producer of salt in Schuyler County, N.Y., was the Glen Salt Company. It drilled wells on property at Watkins Glen, now owned by US Salt. The Glen Salt Company drilled its first well in 1893, struck salt at 1,841 feet, and stopped drilling at 1,902 feet without reaching the bottom of the salt bed. In 1894 a second well was dug without hitting the bottom of the salt bed. By 1896 a third well was dug that stopped at 1,927 feet, still in solid salt.     "Wapsie Valley Creamery, Inc. (Wapsie) is a family-owned business which manufactures cheese, lactose, and whey products at its Independence, Iowa processing plant. Wapsie purchases its milk for the manufacturing of its products from over 160 independent dairy farms in east and northeast Iowa, southwest Wisconsin and northwest Illinois. Wapsie Valley Creamery, Inc. employs 120 people in northeast Iowa. Wapsie Valley Creamery sells its cheese products to large wholesale companies that cut, slice and shred its cheese products into smaller private label packages for retail store shelves. Wapsie’s lactose products are purchased by large manufactures and used as an ingredient mainly in food applications including confectionery, sweeteners and various dairy blends. Wapsie sells its reduced lactose whey products to wholesale companies which use them in processed cheeses, cheese spreads, and calf milk replacer. Wapsie has successfully produced products in the dairy industry since 1906. Although the dairy industry has shown little growth over the years, Wapsie has continuously adjusted its manufacturing processes and equipment to compete in the volatile landscapes of the dairy industry. Wapsie Valley Creamery continues to invest in new equipment that is able to process more milk more efficiently to obtain the best yields in its products. Although the company has grown over the years, the company is still a relatively small company in the dairy industry."
