EmTex 06379 is a modified corn starch that interacts easily with both oil and water in sauces and dressings, a defining feature of an emulsifier. Dressing viscosity can stay constant over a 6-month period which is not the case when egg yolk is used. This starch can partially or completely replace eggs in baked goods, sauces, gravies, soups, and both spoonable and pourable dressings.

Favorable results have been obtained in vanilla sponge cake with EmTex 06379 replacing 25% and 50% egg solids. When used in functional blends, EmTex 06379 can replace 100% egg yolk in sauces and dressings.
