It delivers high viscosity and exhibits excellent resistance to high heat, mechanical shear, and low pH. It is particularly suited for dressings, sauces, canned foods, soups, and gravies. It also offers superior stability throughout a product’s shelf life and is a cost-effective texturizer compared with various gums.
