Application

Hiform 12744 is produced via a unique spray-cooking technology that produces an instant starch with the granular integrity of a cook-up. This very versatile starch is recommended for cold manufacturing processes such as sauces, fruit fillings and toppings where rapid hydration, excellent texture and long shelf life are required. Due to its good dispersion properties, it is also well suited for dry soup mix and gravy applications where steam-table stability is desired.
