- This product is a cold-water swelling starch that possesses many of the desired characteristics of premium cook-up starches without heating.
- CWS starches are produced with a unique spray-cooking technology that produces starch with intact granules, resulting in performance comparable to cook-up counterparts.
- Starches produced with this process are uniformly cooked with a minimum amount of shear and heat damage. This versatile starch is recommended for medium cold manufacturing process (such as fruit fillings, mayonnaise, salad dressings and toppings) where rapid hydration, excellent texture and long shelf life is required.
