    Features

    PURE-SET® modified starches are a family of acid-thinned or thin-boiling starches. The molecular chain length is reduced by acid hydrolysis, resulting in a reduced hot viscosity and strong gel strength formation (or set-back) once cooled. The low hot paste viscosity allows for higher starch solids in the formulation. PURE-SET® modified starches are ideal for confectionary products, where the starch is cooked with sweeteners and water to a low moisture content without becoming too viscous and can easily be deposited into molds. A choice of gel strength and texture also allows for use in other applications such as cheese products, which require strength for grating without loss of integrity, and extruded snacks and cereals where expansion to a thin, even cell structure and maximum crispness is important.
