- In low sugar solids systems INSTANT PURE-FLO® modified starch gains viscosity rapidly.
- Moderate heating and agitation hasten loss of initial grain.
- With higher sugar solids, viscosity and smoothness develop a bit more slowly.
- When fully hydrated, the starch develops a short texture and heavy body, similar to that of a cook-up starch.
