Cherry Central Red Tart Pitted Cherries, IQF - Diced (FP07-59) are prepared from properly ripened fruit of the Montmorency variety group. The fruit is carefully harvested, washed, cooled, and rapidly handled prior to processing. Cherries are destemmed, sorted, sized, and pitted. The fruit is individually quick frozen, packaged in a polylined box, passed through a metal detector, and stored at 0°F or less. The IQF cherries are removed from the freezer, mechanically halved, conveyed across a shaker screen, sorted, and inspected. The halved cherries are sent through the slicer a second time, producing a random-cut diced cherry (approximately 3/8" dice). The fruit is repackaged and passed through a metal detector before returning to the freezer.
