- PURITY® CLOUD food blend will develop a smooth, short texture with high viscosity and excellent opacifying properties when it is fully cooked in an aqueous system.
- Preparations made with PURITY® CLOUD food blend remain stable under low temperature storage conditions.
- The opacifying properties of PURITY® CLOUD food blend allow for the removal of ingredients such as wheat flour, rice flour or raw starches which generally limit the stability and shelf life of refrigerated and frozen foods.
