Applications & Uses

Application

The product is a high performance cold water swelling starch, which possesses many of the desired characteristics of premium cook-up starches without heating. CWS starches are produced with a particular spray-cooking technology to develop products with intact starch granules . Starches produced with this process are uniformly cooked with a minimum amount of shear and heat damage. This extremely versatile starch is recommended for medium to severe cold manufacturing processes (such as salad dressings, fruit fillings and toppings) where rapid hydration, high process tolerance, excellent texture, and long shelf life are required. Due to its good dispersion characteristics and heat stability, the product is also used in food service applications such as dry mixes for soups, sauces and gravies.
