- PURITY® 4 modified starch imparts a smooth, heavy bodied, short texture to food products. These attributes can be achieved and maintained under conditions of high heat, shear and low temperature storage.
- PURITY® 4 modified starch will produce superior taste and mouthfeel for fillings, sauces and puddings because of its bland taste.
- Like all tapioca starches, PURITY® 4 modified starch has slightly less inherent viscosity than a comparable modified waxy maize starch. Therefore, a usage level of 5-10 more PURITY® 4 is recommended depending on the application.
