ADM Maltitol Syrup 100 occurs as a clear, colorless, syrupy liquid. It is a water solution of a hydrogenated, partially hydrolyzed starch containing maltitol, sorbitol, and hydrogenated oligosaccharides and polysaccharides. It is miscible with water and glycerin, and slightly miscible with alcohol. It is non-crystallizing and is used as a humectant and texturizing agent in a wide range of products. Since maltitol is very similar to sucrose in sweetness and functionality, it is often used to replace sugars in sugar-free, no sugar-added, and low net carbohydrate products such as nutritional bars, hard candy, soft confections, frozen desserts, and baked sweet goods. It is non-cariogenic and qualifies for the FDA authorized “does not promote tooth decay” health claim.
