The collected juice is depectinized, filtered, and concentrated to 68 brix with the essence returned. The final concentrate is barreled and frozen at 0°F.

The fruit is carefully harvested, washed, cooled, and rapidly handled prior to processing. Cherries are destemmed, sorted, sized, and pitted. The IQF cherries are removed from the freezer, mechanically halved, conveyed across a shaker screen, sorted, and inspected. The halved cherries are sent through the slicer a second time, producing a random-cut diced cherry (approximately 3/8" dice). The fruit is repackaged and passed through a metal detector before returning to the freezer.
